Chicken Curry

This is a recipe close to my heart as it was passed on to me by my Dad. So here it is ….

Chicken Curry

Ingredients:

  • Chicken (cut into curry pieces) – 650gms
  • Onion (finely chopped) – 3large
  • Tomato (finely chopped) – 2
  • Green Chillies – 3
  • Ginger(finely chopped) – 1tsp
  • Garlic (finely chopped) – 1tbspn
  • Chicken Masala – 2 tspn
  • Chilli powder – 1tspn
  • Coriander powder – 1tspn
  • Coriander leaves
  • Water
  • Oil – 5tbsp
  • Salt – to taste

Method:

In a pan, pour oil. When hot, add the ginger, garlic and green chillies. Saute for a minute.

Add onions and 1/4 tspns of salt. Dad says, it shall help the onion saute quick. Saute till golden brown.

Add chilli powder and coriander powder. Mix well for 3-4 mins. Add chicken masala to it. (My personal choice- Eastern Chicken Masala :P ) Mix well.

Add the tomatoes and saute till the oil is apparent. (If the mixture seems dry, add 1/4 cup of water).

Add  chicken pieces and coriander leaves. Mix well for 5 minutes.

Add 2 glasses of water, mix well again and close with a lid. Allow it to cook in high flame for 7mins. Check the consistency and again cook in low flame for another 10 mins. Add salt to taste.

Garnish with coriander leaves and serve hot.
